``Les Aigrots`` is a Premier Cru located west of the city of Beaune, on the upper part of the hillside. It owes its name to the presence of holly at this location. Indeed, in Burgundian dialect, the word ``aigrot
Soil Clay-limestone soils on hard limestone and scree.
Grape variety 100 % Pinot Noir.
Vinification Hand-picked harvest, grape sorting upon arrival at the winery. Fermentary maceration in temperature-controlled wooden vats for 18 to 21 days. Aging in oak barrels (30% new barrels) for 14 to 16 months.
Nose The delicate bouquet opens with aromas of red fruits (cherry, raspberry...) and spices evolving towards notes of undergrowth.
Palate The rich and fleshy palate is finely structured by present but silky tannins that contribute to a beautiful persistence.
Serve with Classic pairing: Tomato and mozzarella salad. Unusual pairing: Aged beef ribeye.
Serve at Service temperature: between 15-16°C.
Cellaring potential To be enjoyed within 3 to 5 years and more.
