Location
The Savigny-les-Beaune Premier Cru Aux Clous is located to the east of the village, halfway up the hill.
Soil
Clay-limestone soil, formed from limestone scree on a Jurassic subsoil.
Grape variety
100 % Pinot Noir.
Vinification
Aging in oak barrels (30% new barrels) for 16 months.
Robe
Dress cherry color.
Nose
Fresh on the nose with hints of wild berries.
Palate
The palate is long and fruity.
Serve with
Classic pairing: Venison with grand veneur sauce. Unusual pairing: Honey and rosemary duck skewers.
Serve at
Service temperature: 16-17°C.
Cellaring potential
To be enjoyed young with fruit flavors or to be kept for about ten years to let it evolve towards a more animal and spicy profile.
