Unlike what the name of the wine suggests, the Premier Cru ``Les Santenots`` is not located in the village of Volnay, but in that of Meursault.
Soil Clay-limestone brown soils.
Grape variety 100 % Pinot Noir.
Vinification Manual harvesting, sorting of grapes upon arrival at the winery. Fermentative maceration in thermoregulated wooden vats for 18 to 21 days. Aging in oak barrels (35% new barrels) for 14 to 16 months.
Nose The complex bouquet reveals aromas of red fruits (cherry, raspberry...) mixed with spicy and slightly woody notes.
Palate On the palate, this charming wine offers a beautiful volume, a fine structure with smooth tannins, and a long, very aromatic finish.
Serve with Classic pairing: Veal fillet with morel mushrooms. Unusual pairing: Duck carpaccio with pink peppercorns.
Serve at Service temperature: between 16-17°C.
Cellaring potential To be enjoyed within 5 to 7 years and beyond.
