Location
Located in the heart of the Côte Chalonnaise, Mercurey is one of the most important wine appellations in Burgundy with its 650 hectares, its 85 ``village`` climates, and 32 premier crus.
Soil The Clos l’Evêque terroir is located on the top of the hill near the village of Etroyes. The vines are facing South-east on brown soils with a dominant limestone content.
Grape variety 100 % Pinot Noir.
Vinification Traditional Burgundian vinification in open vats with punching down and long maceration. Aging in oak barrels (20% new barrels) for 14 to 16 months.
Robe Beautiful ruby color with cherry reflections.
Nose Fresh nose, notes of undergrowth, some animal nuances like leather and a touch of licorice.
Palate Frank and full-bodied on the palate, this wine has a dense structure and pretty tannins on a limestone background.
Serve with Classic pairing: Veal Blanquette. Unusual pairing: Red tuna carpaccio.
Serve at Service temperature: 17°C.
Cellaring potential This wine is best enjoyed young, with its fruity notes, but can also be stored for 3 to 5 years in a cellar, or even longer.
