Location
In southern Burgundy, this appellation is located in the Maconnais villages of Fuissé, Solutré, Pouilly, Vergisson, and Chaintré.
Soil The vineyard occupies the slopes and the foot of these rocks on stony scree and clay-limestone soils from the Jurassic. The hillsides form small coves with fairly steep slopes, facing east and southeast.
Grape variety 100 % Chardonnay.
Vinification Traditional vinification in temperature-controlled vats at 20°C. Aging on fine lees, 70% in vats and 30% in oak barrels for 8 to 9 months.
Robe A beautiful bright pale yellow.
Nose Light nose with notes of white flowers, complemented by vanilla and some smoky touches.
Palate A floral and round attack on the palate revealing a certain sweetness and a slight woody note. The dominant note remains mineral.
Serve with Classic pairing: Parmesan risotto. Unusual pairing: Grilled lamb chops with rosemary.
Serve at Service temperature: between 11-13°C.
Cellaring potential To be enjoyed young with fruit or to be kept for 3 to 5 years.
