Location
Chablis vineyard, Yonne department, northern Burgundy.
Soil Clay-limestone with south exposure, very steep slope and numerous Kimmeridgian outcrops.
Grape variety 100 % Chardonnay.
Vinification Vinification is essentially carried out in temperature-controlled tanks. Aging on fine lees, 85% in tanks and 15% in oak barrels aged 1 to 4 years for 10 months.
Robe Beautiful finely golden dress.
Nose The first nose reveals an iodized frame, it exhales a fruity touch of pear and olfactory nuances of sweet spices like vanilla and star anise.
Palate In the mouth, the soft and silky texture highlighting the Kimmeridgian terroir, complex without exuberance.
Serve with Classic pairing: Seafood pasta. Unconventional pairing: Truffle risotto.
Serve at Service temperature: between 11-13°C.
Cellaring potential To be enjoyed young or kept for 5 to 7 years and more.
