SoilThe vines thrive in marl covered with scree and red silt from the plateau overlying calcic and brown limestone soil. The exposure is southeast and east.

VinificationVinification takes place in temperature-controlled open vats (28/30°C) with regular punching of the cap followed by 12 to 14 months ageing in oak barrels with maximum 15% new oak.

NoseRedolent of ripe red and black berry aromas with a touch of smoke that opens up to toasted notes and hints of forest undergrowth.
PalateWell structured with an impression of sucrosity. The finish evokes delicate flavours of spice (cinnamon) and a hint of liquorice.
Serve withThis Gevrey-Chambertin is the ideal match for red meats such as pancetta-wrapped beef tenderloin or braised lamb with 4-spice seasoning. Also goes well with small game such as saddle of rabbit with prunes and snow peas and traditional fine cheeses. When it comes to dessert, this wine may be enjoyed with a cherry clafoutis.
