Location
Located at the heart of the Côte de Beaune, the village of Chorey-Les-Beaune lies adjacent to Savigny-Les-Beaune and Aloxe-Corton.
Soil The calcareous clay soil overlies an ancient alluvial fan that is rich in pebbles and therefore well drained. The vines thrive in its extremely dry, sandy base.
Grape variety 100 % Pinot Noir.
Vinification Vinification takes place in temperature-controlled open vats (28/30°C) with regular punching of the cap followed by 12 to 14 months ageing in oak barrels with at most 15% new oak.
Robe Beautiful, intense ruby red in colour.
Nose Redolent of fruity aromas of cooked strawberries, nuances of mild spices such as vanilla and a hint of peppermint.
Palate Impressive body with a sensation of velvetiness. Soft tannins lead up to a delicate finish featuring vegetal notes of green pepper.
Serve with Ideal with superior cuts of red meat and small game. Try this wine with a traditional beef bourguignon, quail with grapes or lamb tagine with prunes. When it comes to cheese, opt for mild varieties such as Saint-Nectaire or Brillat-Savarin.
Serve at 14 to 16°C.
