Location
The wine is made from grapes from selected vineyards throughout the Bourgogne appellation, primarily in the Saône-et-Loire, Côte de Beaune and Yonne.
Soil Though the terroirs are very diverse, all of the soils are a mix of clay and limestone. The vines are planted in a north-south axis with varying exposure to the sun and at varying altitudes. These factors all contribute to this wine’s aromatic complexity.
Grape variety 100 % Chardonnay.
Vinification Vinification takes place at 20°C in temperature-controlled tanks to preserve all of the varietal’s freshness and aromas. The wine is mainly aged in vats for 10 to 12 months on the lees with stirring.
Robe Beautiful pale yellow in colour with brilliant highlights.
Nose Very fresh and expressive, revealing balsamic and mentholated notes.
Palate Pure and direct, expressing the advanced ripeness of the grapes.
Serve with This wine is perfect match with salmon in cream sauce, jellied ham with parsley, prawn risotto, and all poultry dishes. As for cheese, try it with a hard sheep’s cheese such as Ossau-Iraty or with Gruyère from Savoie.
Serve at Serve between 10 and 12°C.
Cellaring potential Enjoy while young and fruity or lay down for 3 to 5 years.
