Location
The vineyards of Chablis are located in France’s Yonne department, in the northern part of Burgundy.
Soil Kimmeridgian layer (Upper Jurassic) containing considerable amounts of very hard marl, ochre in colour in places and very fossiliferous.
Grape variety 100 % Chardonnay.
Vinification Vinification takes place essentially in temperature-controlled tanks with some barrel ageing (a maximum of 15 to 30% new oak) so as to ensure that this Grand Cru expresses all of its minerality and tension.
Robe Beautiful golden colour, brilliant in aspect.
Nose Bursting with minerality underscored by subtle oaked notes that open up to floral nuances of linden blossom and lily.
Palate Silky, generous and very harmonious, ending on a finish that is very mineral, as well as slightly briny and smoky.
Serve with Japanese raw fish dishes (sushi, maki rolls, sashimi). Grilled or stewed white meats would also be perfect and as for cheeses, try with a mild goat’s cheese or fresh cheese with honey.
Serve at Serve between 10 and 12°C to best appreciate this wine’s freshness and minerality.
Cellaring potential Enjoy when young and fruity or lay down for up to 3 years.
